File this under entirely off topic. I planned to write about a new cancer test this week. However, no thanks to medical drama (both human and canine), I don't feel up to wading through the research. Instead, since it's about the time many New Year's Resolutions fail and since *nearly March is kind of the new January, here's an easy kale recipe I use all the time. It's perfect for people who don't like kale. I actually love it, as do my dogs. If you've ever tried to make kale chips and failed, then welcome to the club. This easy kale recipe made in a frying pan is much more forgiving than trying to crisp up kale in the oven. Let me know if you try it. Also, don't miss hilarious dog photos ahead.

Easy Kale Recipe Ingredients

  • 2 T olive oil
  • Pinch of dried red pepper flakes
  • Shredded kale, with stems removed
  • Salt (or garlic salt) to taste

Easy Kale Recipe Instructions

Heat the olive oil in a frying pan on medium for several minutes. I prefer and almost exclusively cast iron in my own cooking. Yes, I don't measure the oil. I just pour in whatever. 

Add the red pepper flakes to spice up the oil before adding the kale.

Add the shredded kale and stir around to coat with the hot oil.

Once the kale is coated with oil and starts to cook, sprinkle with salt or garlic salt.

Stir the kale several times so that it doesn't burn.

It typically takes 4-5 minutes of cooking before the kale becomes the right consistency, where some is still kind of firm and some is kind of crispy. 

Remove from heat and serve immediately.

Easy Kale Recipe for Snacking or Side Dish

I cook this up with 1-2 big leaves of kale as an easy side dish for dinner all the time. It makes me feel like I'm eating healthier. I actually like raw kale too. I grow it in my garden every summer and practically live on it. It's turned me against other types of limp salad fixings, but I also like cooked kale ... kind of like kale chips, but with much more margin for error. 

Can You Give Kale to Dogs?

Yes!

Clover and Mr. Stix like eating kale and kale stems, so I share with them. They crack me up when they come begging while I cook. The photo of Clover is especially funny with her 2 missing front teeth. (She broke them off a couple years ago and had to have the stumps surgically removed.)

Easy Kale Recipe
